The fermentation process enriches it with enzymes that stimulate digestion, and the rich proteins contribute to a predominantly vegetarian diet. Tamari is pasteurized for one hour at 82°C to prevent degradation and stop fermentation; its high water content would otherwise prevent its preservation. It goes well with any type of savory dish. It replaces salt, bouillon cubes and various flavors. Also suitable for cold dishes, salads and sauces. It can be used directly on the plate with rice, pasta and sushi.
