The olives are harvested in November and December, in the middle of the harvest season, when the olives start to become mature, but also in the last period of the harvest season when the olives are already mature. Very important, the oil is manufactured on the same day that the olives are harvested. The processing temperature is between 17 and 20 degrees. The acidity is very low, up to 0.4%.
