There are two species of honey bee in Poland; this is the so-called leaf rose (usually from lime trees) and coniferous rose. Honey is collected by bees from the secretions of insects that parasitize the leaves of these trees: (aphids or scales), mixed with the cellular juice that drains as a result of the insect sting. Please note that honey does not appear every year. In some regions of Poland it appears once every few years and that is why honey honey is one of the most expensive honeys in Poland.
