MGO stands for methylglyoxal and is the special ingredient that makes Manuka honey so unique. During a natural ripening process of approximately 18 months, this substance is formed from dihydroxyacetone, which is present in the nectar of the Manuka plant. To this day, it is not fully understood why methylglyoxal occurs in such high concentrations in the nectar of the Manuka plant. An MGO level of over 1000 is considered exceptionally high and makes this honey a particularly rare specialty from New Zealand.
